Ale Braised Short Ribs

Prepared Ale Braised Short Ribs in a slow cooker for a delicious, easy meal.

I don’t think there are too many things better than coming home after a day at work and smelling a delicious dinner, hot and ready to eat, wafting through the house. It always makes me feel so good. J  And the Ale Braised Short Ribs are absolutely wonderful.

Since we discovered butternut squash several years ago, I am always on the lookout for recipes that include it and appeal to us. This recipe hit it on all counts. We found this recipe in the meals in minutes slow cooker quick, easy & delicious (the title is in all lower case letters) cookbook. We kept it mostly the same, and I really wouldn’t change much of anything about it except a few of the instructions.

This is a great slow cooker recipe, but if you do not have a trusty crock pot, it can be cooked on the stove over low heat or in a 300o F oven. Just keep the lid on to keep the moisture in and do not leave it unattended like you can a crock pot.

The beer helps to add flavor and tenderize the meat, but you can use non-alcoholic beer if you are under legal age or do not want to cook with alcohol. It works the same way. The recipe calls for canned diced tomatoes, but we only had canned whole tomatoes. It would have been a little easier with diced ones, but it was fine with the whole tomatoes.




Ale Braised Short Ribs

Makes 6 servings

Lbs. bone-in beef short ribs


Salt and pepper, to taste


Whole onions, thinly sliced (We actually used white onion)


Cloves garlic, sliced


Lbs. butternut squash, peeled and cut into chunks


14 ½ oz. can Roma tomatoes with juice, diced


Bottle ale or dark beer


Tablespoons all-purpose flour


Cup water






1.    Generously season the ribs with salt and pepper on all sides. Brown the ribs in a heavy skillet over medium high heat until it is well-browned on each side or under the broiler in the oven. Turn once to get the other side browned. It takes 3-4 minutes each side if the pan or broiler is hot.

2.    Place browned ribs into the bottom of the crock pot. Scatter the sliced onions over the ribs. Add the squash to the top of the onions, then add the tomatoes and their juice over all. Pour beer over everything.

3.    Cook on the high setting for 5-6 hours or the low setting for 7-8 hours. When it is finished, the meat should be falling off of the bones and the squash should be tender.

4.    Transfer the ribs and squash to a shallow bowl or platter and cover to keep it warm. Skim off the fat on the surface of the liquid.  

5.    Turn the slow cooker to high heat. In a small bowl, whisk the flour and water together. Whisk mixture into the liquid in the slow cooker. Cook uncovered for about 15 minutes, stirring occasionally, until the sauce is thickened slightly. Season to taste with salt and pepper. 

6.    Take the meat from the bones and shred into bite-sized pieces. Place meat and squash into bowls and add thickened sauce to the bowls, also. Serve.

7.    Put remaining meat and squash back into sauce. Keeps for several days in the refrigerator in a well-sealed container. Can be frozen for up to 4 months.
