Apple Yogurt Dessert

Apple Yogurt Dessert is simply delicious with a wonderful crunch!

I am all for simple things for the last few posts. Work is hectic, Andy is back in school and Glenn, who is a teacher and was off for the summer, is back at work, too. With things so busy, simple is good! :-) 

We first had this at a friend's house. Helen, a very energetic eighty-something-year-old, had us over for dinner one delightful evening. She served  a beautiful baked chicken, mashed potatoes, vegetables, salad, the whole delicious works. A little later she announced that she was serving dessert. We all looked at each other wondering how we could possibly eat dessert. She brought out pretty little cups filled with this amazingly simple, yet totally satisfying Apple Yogurt Dessert. Needless to say, we were able to enjoy it without bursting at the seams.

We make this quite often. You can use low-fat or fat-free yogurt and it still tastes great. You can substitute other types of fruit for the apple. Pears anyone? I like to use firm fruits in this dessert because part of what makes it different from regular yogurt with fruit is the crunchy texture of the apple. Sprinkle some chopped roasted almonds on top for more texture if you like.

Apple Yogurt Dessert is a treat that tastes like an indulgence, but can be guilt-free depending on how you make it.

Apple Yogurt Dessert

Makes 2-4 servings

Ingredients 

1          24 oz. container Plain or Vanilla low fat or fat-free yogurt 

1          Crisp apple, such as Gala, Red Delicious, Braeburn, or Pink Lady 

 

Instructions 

1.  Wash the apple and dry it off.  Remove the core by cutting it out or using a corer. Dice the apple into little chunks.

2. Mix the diced apple into the yogurt immediately to keep apple from turning brown. Either refrigerate the mixture or serve immediately.
