Baked Butternut Squash

Baked Butternut Squash is like squash candy it's so good!

 

Would you believe that we had never tried butternut squash until a couple of years ago? And what a loss, because we absolutely love it! It has a mild taste and reminds us of acorn squash, which we also love, but butternut squash doesn’t have the long stringy fibers that acorn squash does. It is very smooth textured.  

We like it prepared several ways, but the way we eat it most is simply baked with a little butter and brown sugar. Super easy and fast to make. And really, really delicious. 

Butternut squash is rock hard if you purchase a whole one and try to cut it. We are lucky, because we can normally find it pre-cut into pieces. If you can’t find it already prepared, please be very, very careful as you cut it up. It is easy for a knife to slip when trying to cut something that hard. 

Pre-heat the oven, toss the ingredients together, and bake while you prepare the main dish. It’s ready in about an hour, when you can poke a fork into a piece easily.

Baked Butternut Squash

Serves 6 - 8

Ingredients

Cups butternut squash, cut into bite-sized pieces

2

Tablespoons butter, cut into large cubes

¼

Cup brown sugar

 

 

 

Instructions

 

1.     Pre-heat oven to 350O F.  Place butternut squash in an ovenproof baking dish.

 

 

2.     Sprinkle the brown sugar over top of all. Dot butter over the top of all.

3.      Bake for approximately 1 hour until soft but not soggy. Serve.
