Baked Sweet Potatoes

Deep orange sweet potatoes are sumptuous with a little brown sugar and cinnamon .

Baked sweet potatoes are a nice change from the traditional baked Idaho or russet potato as a side dish with a meal. Add a little butter and sprinkle a little brown sugar and cinnamon on the bright orange flesh of a baked sweet potato and you have a truly extraordinary potato. On top of the great taste, sweet potatoes pack a more powerful nutritional punch compared to normal white potatoes with high levels of beta carotene and vitamin A, while being naturally low in fat.

Baking sweet potatoes can also be the first step in making some recipes which call for sweet potatoes. In some baked goods, sweet potatoes make a reasonable substitute for pumpkin because the taste and texture is very close to pumpkin.  

I normally don’t bother oiling the outside of the sweet potato skin before baking. After baking, I allow the sweet potato to cool enough to be able to handle it without burning my fingers, then I cut the potato in half and squeeze each side to get the pulp out. Or I take a spoon and scoop the insides out. Either way, it comes out easily and is ready to use.

So the next time you want something besides a normal baked potato, consider making a baked sweet potato to change it up.

Baked Sweet Potatoes

Makes 1 serving per potato  

Ingredients 

 

1 

sweet potato per person 

2 

teaspoons butter 

1-2 

teaspoons brown sugar 

½ -1 

teaspoon ground cinnamon 

 

 

 

Instructions 

 

1.    Preheat oven to 350o F. Choose sweet potatoes without blemishes. Scrub the potatoes under cool running water. Lightly prick each potato with a fork to pierce the skin in several places.

2.    Place the potatoes in the oven on a baking sheet or directly on the oven racks. Bake for approximately 50-60 minutes, depending on size of potato, until a knife inserted into the middle of each sweet potato goes in easily. Remove from the oven and immediately slice down the length of the top of the potato. Gently squeeze both ends towards the middle to open the slit up to expose the interior of the potato. 

 

3.    Add the butter in the slit of the hot potato. As it melts, sprinkle the brown sugar and cinnamon over the interior. Eat while hot.
