Bean Burritos

It may not look like much, but this Bean Burrito is packed full of great flavor.

Bean Burritos are a quick, tasty dinner when we are really busy and have very little time to grab something to eat. In 15 minutes you can be feeding a hungry family and no utensils are needed unless you want to use them! And the ingredients are things that we almost always have on hand.

An added bonus is that Bean Burritos are really inexpensive to make. The most costly part are the beans and the little bit of cheese you use for each burrito.

It is quite easy to fold the tortilla to make the burrito. There is more than one way to fold it, but we show you one of the ways we do it in the photos below. It isn’t necessary to warm them, but we  heat the burritos in the microwave oven for about 30-45 seconds. If you don’t have a microwave, you can use a fry pan on very low heat with a lid over it to heat them up. Keep a close eye on it so the burrito doesn’t burn.




Bean Burritos

Makes single servings, 4 per can of beans

¼          Regular can of refried beans

1           Tortilla shell, soft flour one, can use a flavored one

          Handful shredded cheese, Colby-Jack or Cheddar

              Filling ingredients such as sour cream, chopped onions, salsa,
 jalapeño peppers, to taste





1.    Place tortillas in microwave. Cover with a moist paper towel and heat for 15 seconds to soften.


2.    Place softened tortilla on plate or other flat surface. Scoop approximately ¼ can of the refried beans onto the tortilla, keeping it about 1” away from the edges. Add any other ingredients that you want on top, making sure that you will not have too much to fold and roll the tortilla over. It is better to make 2 burritos than to fill it too much and dribble the contents down your shirt.

3.    Fold the two sides of the tortilla in over the filling. Fold the bottom up over the two sides, then roll gently but firmly up the rest of the way. Tuck the sides in as you roll to keep the filling from squeezing out of the sides.

4.    Put the burrito in the microwave and heat for 30-45 seconds. It is now ready to eat. Be careful not to get burned with hot filling!
