Cheesy Caraway Bread Spread

Ok, so I prefer to eat entire slices of our hot Cheesy Caraway Bread Spread melted on thick slices of Italian or French bread.


We’ve had a lot of rainy evenings lately. I’m not complaining because we can use the rain, but it does make us want something hot and cheesy.

I can’t tell you where Mom got the recipe, but Cheesy Caraway Bread Spread was always such a treat when we were kids. Hot bubbly, caraway-studded cheese melted over thick slices of Italian or rye bread. So warm and satisfying. It makes a great appetizer or a light meal paired with a bowl of soup.

The original recipe calls for garlic salt, but we have been cutting back on salt and found it a little strong. The next time, we made the spread with straight garlic powder instead and prefer it that way. We show the recipe without the salt below, but feel free to use the garlic salt.

This recipe is easily doubled if you are serving a crowd. Be careful when eating it, because the cheese will be really hot (but oh, so good).

Makes 4 open-faced sandwiches or 12 appetizer-sized servings



loaf of French, Italian or rye bread, sliced into 1” thick slices


cup shredded Cheddar cheese


cup mayonnaise (do not use fat free)

½ - 1

teaspoon garlic powder


teaspoon caraway seed (can use dill if you prefer)






1.    Preheat the oven to 3500 F. In a medium bowl, stir the shredded cheese, mayonnaise, garlic powder and caraway seeds together so it is well combined.

2.  Spread a thick layer of the cheese mixture over one surface of each slice of bread. Place the bread cheese side up on a cookie sheet or jelly roll pan.

3.  Place the baking pan in the oven and bake until the cheese is melted completely, about 10 to 14 minutes, based on how thick the cheese mixture is spread. Cool slightly and cut in half for larger servings or cut each slice into 4 appetizer-sized pieces.
