Chicken in a Crock Pot

Creamy sauce makes the vegetables and chicken taste extra good.

 

We recently picked up a neat cookbook from Cracker Barrel restaurant. For those of you who don’t know what Cracker Barrel is like, it is a country-themed, down home style restaurant with good food. They are always located right off a major highway. They have a gift store at the entrance with fun things like quirky toys, old-time candy that you don’t find often anymore, and yes, cookbooks. We bought Put a Lid on it! By Karlen Evins.

One of the recipes, Mema’s Chicken in a (Crock) Pot, sounded really good, so we had to make it. The first time we made it we used chicken breasts. Although they had good flavor, they got a little dry when they were cooked that long. We used chicken thighs the next time and the meat stayed moist and delicious. We also added a few red pepper flakes to spice it up and it was fantastic. We did a couple of other small tweaks, reflected in the recipe below.

Remember to always wash your veggies right before using them! You want to get rid of any dirt or grit and rinse off any pesticides or other things you don’t want to serve your family. Even organic vegetables benefit from a quick rinse in cool water.

 

 

Chicken in a Crock Pot

 

Serves 6-8

Serves 8-10 

Ingredients

3

pounds chicken thighs

2

teaspoons salt

½

teaspoon black pepper

½

cup chicken broth

1

can condensed cream of mushroom soup

2

carrots, chopped or about 20 baby carrots

2

onions, chopped

2

stalks celery, chopped

¼

cup self-rising flour

½

teaspoon basil, dried

1

4 ounce jar mushrooms, sliced or whole

1

cup sour cream

1

cup water

 

optional: ½ teaspoon red pepper flakes

 

 

Instructions

 

1.     Place the chicken pieces in the crock pot. Season with salt and pepper.

2.    In a large pan over medium heat, mix the chicken broth, the soup, carrots, onions, celery, flour, basil, mushrooms, and the red pepper flakes if you are using it. Bring the mixture to a boil.

3.       Remove the pan from the heat. Add the water and sour cream and stir into the hot mixture.

4.     Add the mushrooms to the chicken in the crock pot. Pour the hot mixture over the chicken and mushrooms.

5.     Cook on low heat for 7 to 8 hours. When ready to serve, place chicken on plates and pour the vegetables and sauce over the chicken. Serve while hot.
