Chocolate Peanut Butter Cookies

These delicious Chocolate Peanut Butter go together quickly. You can make an entire plateful in under 10 minutes!

 

Chocolate Peanut Butter Cookies are sooo simple and quick to make that you just have to make them. Then, you have to show how good your willpower is, because they are delicious and addictive!  Rich chocolate with the crunch of the cracker and creaminess of peanut butter…mmmmm, so good.

If you ever need to make a fast treat for an event or just for snacking, Chocolate Peanut Butter Cookies are great. The recipe calls for three simple ingredients: peanut butter, butter-type crackers, and chocolate bark or candy bars. They combine together to make a slightly salty, crunchy, creamy cookie. No more cracker taste, either.

Use either chocolate bark or chocolate candy bars, such as Hershey bars, to coat the peanut butter filled cookies. Microwaving the chocolate makes it a quick process.

They stay fresh for a couple of days if they are enclosed in an airtight container. I have heard that they can get a little soggy if left longer than that, but we haven’t had any last that long. J

 

 

Chocolate Peanut Butter Cookies

Makes approximately 2 dozen cookies

2

sleeve butter flavored crackers, such as original Ritz

16

ounces chocolate bars or chocolate bark, chopped or broken into medium sized pieces

½

cup creamy or crunchy peanut butter, your choice

 

 

 

 

Instructions

 

1.     Place a sheet of waxed paper on a flat surface. I use a low sided sheet pan.

2.    Take a cracker out of the sleeve it comes in. Spread a generous layer of peanut butter on the cracker. Take a second cracker and cover the first, creating a sandwich of the two crackers with the peanut butter between them.

3.     Put the chopped chocolate in a microwave safe bowl. Put into the microwave and nuke it on high for about 15 seconds. Stir the chocolate, then place back into microwave and melt it for another 15seconds, then stir again. Repeat this process until the chocolate is melted and silky, fluid.

4.    Take each cracker/peanut butter sandwich and coat with the melted chocolate. Be careful not to burn yourself on the hot, melted chocolate. I use a fork and a spoon. The fork holds the cracker sandwich and I spoon the chocolate over it. Make sure to get all sides of the cookie.

5.    Place the finished cookies on the waxed paper, making sure they don’t touch. When the chocolate firms up again, the cookies are ready to eat. Store in airtight container for up to 3 days.
