Cool and crunchy, coleslaw is a must for summer meals!

Summer would not be the same without our favorite, easy coleslaw recipe. Our coleslaw recipe is simple, but very tasty. It is on the sweet side, no vinegar in this one!

If I can find it, I will use a packaged coleslaw mix that has the normal shredded green cabbage, as well as shredded carrots and red cabbage. If I can only find the shredded green cabbage, I will shred carrots and red cabbage myself and add it to the packaged cabbage. It just gives it a better flavor and looks so much prettier. Of course, you can always shred everything yourself, which we have done often when we’ve had a fresh cabbage. Try to get the pieces uniform if you shred all of the ingredients yourself.

We use Miracle Whip in the dressing because we like the flavor, but if you don’t like it or can’t find it, feel free to use regular mayonnaise. You may want to add a pinch more sugar to sweeten it up a bit more than if you were using Miracle Whip.

The dressing is pretty thick when you first mix it and use it on the cabbage mixture. Don’t worry! The dressing interacts with the salad ingredients and breaks the cabbage down a little, drawing some of the moisture out. The ingredients are still crunchy and the cabbage juice thins the dressing down slightly, making it moist and tangy.

The salad should be prepared at least an hour before serving. It will not hurt anything to serve it immediately after making the salad, but it tastes better if it has time to mix together. Cover it and store it in the refrigerator until you are ready to eat. It also lasts for a couple of days in refrigerator if you don’t eat it all at one time!

1         16 oz. package shredded cabbage and carrots
             (optional red cabbage, too)

½         cup Miracle Whip or mayonnaise

½         cup white sugar


(Note: If you are shredding the ingredients yourself, use ½ of a medium cabbage, 2 large peeled carrots, and ¼ small red cabbage.)







1.   Pour Miracle Whip or mayonnaise into a bowl large enough to hold the entire amount of shredded ingredients while still allowing for mixing. Add sugar to the Miracle Whip/mayonnaise and mix well.

2.  Add the shredded ingredients to the bowl and mix thoroughly with the dressing. Cover and refrigerate until serving, at least one hour. Mix again, then
