Tender new potatoes and tender-crisp green beans are flavored with a buttery garlic sauce and are a family favorite.

This easy side dish recipe is a favorite of ours. To me, this recipe offers some of the best features when cooking: It requires minimal tending because the oven does all of the work, it combines more than a single vegetable into one dish, I can bake a main dish at the same time to make good use of the oven heat and it makes a really delicious side dish. The potatoes get tender, the green beans still have a little snap to them and everything comes together with the tantalizing seasoned butter sauce. So yum!

The green beans need to be thin in order to cook in the time shown in the recipe. I use a thin French green bean for this recipe, but you could use regular green beans and either cut them into thin slices or add them in with the potatoes earlier so they can cook a little longer. Either way would work just fine. I hope your family enjoys these as much as mine does!

Makes 10 servings





pounds new (small) red potatoes


tablespoons butter


tablespoon garlic, chopped


teaspoon dried dill


teaspoon dried thyme


teaspoon salt


teaspoon ground black pepper

1. Preheat oven to 350o F. Cut the potatoes into halves or quarters so that they are all approximately the same size, small enough for a bite. In a large, heavy, oven-safe skillet such as cast iron, melt the butter. Add the garlic and sauté briefly until fragrant, approximately 1-2 minutes. Remove from the heat.

2.  Add the potatoes to the garlic butter in the skillet and stir them so the potatoes are well-coated with the butter. Arrange the potatoes so they are in a single layer covering the bottom of the skillet. Add the remaining seasonings by sprinkling them evenly over the potatoes. Cover the pan with a lid or with foil and place in the oven.

3.  Cook for 30 minutes, then remove the cover and stir the potatoes. Place back in the oven without the cover and cook for an additional 20 minutes. While it is cooking, clean and snap the ends of the green beans.  After the 20 minutes, add the green beans into the potatoes and stir to coat the beans with the garlic butter. Cook for about 15 more minutes, until the potatoes are tender and the beans are cooked but still have a little snap in them. Taste them and add more salt or pepper if needed. Serve hot.
