Italian Sausage Breakfast Burrito

Handheld breakfast food, Italian Sausage Breakfast Burritos are super delicious and quick to make.

We love these warm, slightly spicy breakfast burritos especially during cold weather. The Italian sausage is sautéed to mostly cook it, then the scrambled egg mixture is poured in and everything cooks together in the end. The fluffy eggs and warm sausage are then wrapped in softened burrito shells to make a soft and totally satisfying handheld breakfast. Grab it and go if you are in a hurry! And if you’re not in a hurry, sit back and savor the goodness.

Any sausage can be used to make these and we sometimes use breakfast sausage, but our favorite way to fix breakfast burritos is with a spicy Italian sausage. The key is to either use bulk sausage or to take link sausage out of the casing. Cook the sausage first, breaking it into small pieces as it cooks, before adding the eggs to the pan.  

Wait until the eggs are nearly done before adding salt and pepper. Most of the time the sausage is plenty spicy and salty and we don’t need to add anything.

Makes 4 large burritos




links of spicy Italian sausage or ½ pound of bulk sausage


large eggs

1/8 +/-

cup milk


Salt and pepper, if needed

1.    Heat a non-stick coated skillet over medium heat. If using sausage links use a knife to slit through the casing and squeeze the sausage into the heated pan. Gently sauté the sausage until nearly completely cooked through. Transfer the sausage to a paper towel-lined plate and wipe out the pan.

2.    Crack the eggs into a bowl and mix them up. Whisk the milk into the eggs to make scrambled eggs. Put the sausage back into the pan and add the egg mixture to the pan. Gently cook the eggs and sausage together, stirring periodically to fluff the eggs until the eggs are set.

3.    While eggs are cooking, place the flour tortillas on a plate and cover with a damp, not wet, paper towel. Place the plate in the microwave and zap them for 30 seconds or until they are warm and pliable.

4.    Place a fourth of the eggs/sausage in a line in the middle of the tortilla. Fold one side of the tortilla toward the center along the long edge of the eggs. Fold the two shorter sides in towards the edges of the eggs, then roll the eggs over the remaining tortilla to form a rolled burrito with the eggs and sausage inside. Cut in half or eat whole. These can be made ahead of time, rolled up in aluminum foil and stored in a freezer bag in the freezer for a month or so. Heat them up in a warm oven or remove the foil and microwave to re-heat before eating.
