Italian Sausage Sandwich with Peppers and Onion

My husband, Glenn, came up with his version of this sandwich years ago and we have been enjoying them ever since.

When cooking Italian sausage, it works well to cook them is some water to begin with to allow them to cook through without drying out. It also allows some of the fat to be drained off when the sausages are finished. Once the sausages are cooked through, they can be removed from the pan and browned in a little olive oil. Once the sausages are done, prick through the skin where the fat and other liquids are gathered to prevent the hot fluids from squirting out and burning you as you bite into the sandwich.

Once cooked, the sausage can be cut open lengthwise or kept whole and placed on the bun. Cheese can be added to the sandwich either before or after the peppers and onions are draped over the sausage.

We prefer to use hot Italian sausage to make these sandwiches but they are just as good using sweet Italian sausages.

Peppers and Onions

Makes 3 sandwiches

 These tasty sandwiches are a staple at our house.

 

Ingredients

3     Italian sausage links, hot or sweet

1     whole white, yellow or sweet onion, sliced thinly into long strips

3     peppers, green, yellow, or red, seeded and sliced into long strips

1     Tablespoons olive oil

       Pizza sauce, if desired

       Mozzarella cheese, if desired

3     Hot dog or hoagie buns

 

Instructions

1. Cook the Italian sausage in a frying pan, first in water until cooked through, then with a little bit of olive oil to brown them up.

2. In another skillet, add a Tablespoon of olive oil and heat it on medium heat. Add the peppers and onions and cook until they are at your desired level of doneness (Is that a word?). Anyway, cook them until they are soft, but not mushy.

3. Split the buns. Add pizza sauce to the bun if desired. Split the Italian sausage lengthwise if you want and place them on the bun. Add pepper and onion mixture over the sausage. Add cheese if you want to and zap the sandwich in the microwave oven at 10 second intervals until the cheese is melted. Eat with a fork and knife or try your luck using your hands!
