Mushroom Salad

So simple, Mushroom Salad is a fresh idea to accompany your meals.


As I wrote in a post earlier this week, one of Glenn’s favorite salads is Mushroom Salad at a restaurant that is too expensive to go to except for infrequent special occasions.  We make it at home so that Glenn can have it anytime he wants.

Mushroom Salad is so simple to make, using only two to four ingredients, depending on what you like. First, we start with fresh small white mushrooms. You can find them pre-sliced in the produce section of the grocery store or you can buy them whole and slice them yourself. I have a little trick for slicing mushrooms. I normally buy them whole, then after cleaning them with a  moist paper towel to brush off any soil, I use an egg slicer to gently cut the mushrooms into even slices. The next ingredient you need is a good Italian Parmesan salad dressing. Feel free to use our recipe here. Place the mushrooms in a salad bowl, pour the salad dressing over the top and, if you want, add fresh ground pepper and more freshly grate Parmesan cheese on top. How very easy is that?

Serve the salad immediately to keep the mushrooms from getting soggy. If you want to make it up in advance, prepare the dressing and the mushrooms, then wait until the last minute to pour the dressing over the mushrooms and add the pepper and extra cheese right before serving. Enjoy!



Mushroom Salad 


Makes 1 large or 2 small salads

12 ounce package of white mushrooms, sliced into ½” slices

¼ to ½

cup Italian Parmesan salad dressing, either homemade or store bought


Fresh ground pepper, to taste


Extra Parmesan cheese, freshly grated, if desired





1.     Wipe off the mushrooms, if needed, with a moist paper towel and place mushrooms in a salad bowl.

2.     Pour the Italian Parmesan salad dressing over the top of the mushrooms.


3.     Grind fresh pepper and grate Parmesan cheese over the top of the salad, if desired. Serve immediately to prevent the mushrooms from getting soggy.
