Peach Spice Cake

Fresh peach slices nestle in a moist spice cake with a buttery sugar bottom in our Peach Spice Cake.

Our Peach Spice Cake recipes makes an awesome moist spice cake with a bottom layer of caramelized sugar and peaches. It is a terrific way to use up those somewhat shriveled or slightly blemished fresh peaches haunting your refrigerator’s produce bin and giving you guilt pangs every time you see them. Peel them with a paring knife or by our hot water method, cut out any soft or bruised spots, slice the good fruit and proceed with the recipe for a really delicious cake. Of course, unblemished peaches work will, too!

The original recipe from Mom’s recipe box calls for using peach halves. We made it that way and it was delicious, but really clunky and awkward to cut and eat, so we modified the recipe to use peach slices instead. Same great flavor, better texture and easier to eat.

So use up your leftover peaches and surprise your family with a really flavorful cake.

 

 

Peach Spice Cake

Makes 8 servings

Ingredients

2

pounds peaches, peeled and sliced

½

cup light brown sugar

1

teaspoon almond extract

13

tablespoons room-temperature butter

2 ¼

cups all purpose flour

1 ½

teaspoons baking soda

¼

teaspoon salt

½

teaspoon cinnamon

½

teaspoon ground ginger

¼

teaspoon ground nutmeg

1

cup granulated sugar

1

egg

1

teaspoon vanilla extract

1 ½

cups sour cream

 

 

Instructions

 

1.    Preheat oven to 350o F. Peel and slice the peaches. Cook the brown sugar in 5 tablespoons of butter in a 10” ovenproof frying pan over medium-high heat until the sugar is dissolved.

2.    Off of the heat, arrange the peach slices in the bottom of the pan on top of the sugar/butter mixture. Combine the flour, baking soda, salt and all of the spices in a medium-sized bowl.

3.    In another bowl, beat the remaining 8 tablespoons of butter with the granulated sugar until it is well incorporated. Beat in the egg and vanilla. Stir in the flour mixture and sour cream one-third at a time, alternating between the two. Spread over the peaches and bake until top is golden brown and a toothpick inserted in the center comes out clean, about 50 to 55 minutes.
