Pumpkin Spice Whoopie Pies

How can you resist these Pumpkin Spice Whoopie Pies with Cream Cheese Icing?


In addition to the traditional pumpkin pie, I wanted to make something else with pumpkin in for Thanksgiving this year. We love whoopie pies, so I decided to make a batch of soft pumpkin cookies and add a cream cheese icing filling.

I made up a batch of our Pumpkin Spice Whoopie Pies and took them into work. As Glenn and I were heading to the car, we ran into our young neighbor, Mercedes, and offered her one. She took a bite, closed her eyes, and said, “Mmmmmmmmm.” We took that to mean she liked them. Lol!

At work, they went fast with rave reviews. It is so fun making food for people and watching them enjoy it. After all of the positive comments, we knew we had a winner!

I used a standard ice cream scooper to measure out the dough for the first batch that I placed into the oven. They grew to gigantic sizes and ran all together as they cooked. I had forgotten how much they spread! So for all of the rest of them, I used a small scoop. You could also use a heaping soup spoon to place them on the cookie sheet. Watch the baking time since the exact time it takes to bake these will depend on your oven, and the size you end up making the cookies.




Pumpkin Spice Whoopie Pies


Makes approximately 48 cookies (24 finished whoopie pies)

This looks like a lot of ingredients for Pumpkin Spice Whoopie Pies, but they are quick and easy to make.





cups all purpose flour 

teaspoon baking soda 

teaspoons baking powder 

teaspoons cinnamon 

teaspoons nutmeg 

1 ½  

teaspoon allspice 


teaspoon ginger 

1 ½  

teaspoon salt 

cup vegetable oil 

cups white sugar 


15 oz cans solid-pack pumpkin (not pumpkin pie filling), such as Libby’s brand 

1 ½  

Tablespoons sour cream 

teaspoons vanilla extract 






1. Preheat oven to 350o F. Mix the first 8 ingredients together in a bowl. I use a whisk to make sure everything is mixed thoroughly. Set aside until needed.

2. In a mixing bowl, cream together the vegetable oil and sugar until light. Add the eggs one at a time and mix well in between.  

3. Add the pumpkin and mix. Add the sour cream and vanilla extract and mix well. 

4. Add the flour and spice mixture a little at a time, mixing thoroughly in between each addition. When all is mixed together, drop by heaping spoonfuls onto a greased cookie sheet or silpat on a cookie sheet. Bake for 13 minutes, then check. The cookie should be firm to the touch, but should give a little when you gently poke at it. Cook on racks when done.

5. When cool, take one cookie and spread a generous layer of cream cheese icing on it. Cover with another cookie to make a sandwich with the filling between.
