Slow Cooker Chili Ribs

Coated with a luscious homemade bbq sauce, these ribs get snarfed up quickly every time we make them.

It has been so hot lately that I have been making food that doesn’t heat the kitchen up. And one appliance I love to use to keep the kitchen cool is the slow cooker. We love slow cooker rib recipes and many of them are good, but this one from the Fix-It and Forget-It Recipes for Entertaining cookbook is exceptional. Tender pork ribs smothered in a spicy, not too sweet sauce. The flavors are wonderful. I made a good-sized batch for the three of us, thinking there would be enough leftovers for another meal. Well, there were leftovers, but only enough for one person! Andy had them for lunch the next day.

The chili sauce is an Asian spicy sauce that can be found in jars in the ethnic isle of the supermarket or in any Asian market. It can be spicy or sweet. If you use the spicy style, adjust or eliminate the hot sauce to keep the final dish from being too spicy. I prefer to use the neutral or sweet chili sauce to give another flavor profile.

It only takes a few minutes to prepare, so I am able to prep it all in the morning and still make it to work on time. And you know how much I love knowing that supper is bubbling away at home during the work day, ready for whenever we get there to eat it! And the kitchen stays cool.

Makes 4-6 servings

Ingredients

 

4

pounds of boneless pork spare ribs

½

cup brown sugar

1

12 oz. jar of chili sauce

¼

cup balsamic vinegar

2

tablespoons Worcestershire sauce

2

tablespoons Dijon mustard

1-2

teaspoons hot sauce

 

Instructions

1. In a heavy skillet over medium heat, brown the ribs on each side about 3 minutes per side. Place the browned meat into the slow cooker.

2. Combine all of the remaining ingredients and mix well. Pour half to three-quarters of the sauce over the ribs in the crock pot, keeping the second half of the sauce for use later. Cover and cook on low for 8-10 hours.

3. Remove the cooked ribs from the slow cooker and place on a serving platter. Heat up the remaining sauce and pour it evenly over the ribs and serve.
