Spicy Asian Noodles with Chicken

Tender bites of chicken and noodles are covered in a fragrant and slightly spicy sauce then topped with crunchy peanuts in this quick and easy stir fry meal.

Spicy Asian Noodles with Chicken is a dish that combines a lot of flavor with textures that go really well together. Tender chunks of chicken are mixed with fresh ginger, garlic and other spices to make a mildly spicy sauce. Then freshly cooked thin noodles are stirred into the chicken and sauce. Crunchy chopped peanuts top the dish, bringing it all together.

The heat of the spices can be regulated by how much chile paste is used in the recipe. If you prefer, you can leave it out completely if you don’t like spicy food. As always with Asian stir fry, the ingredients list can appear daunting but don’t let it stop you from making this. It really doesn’t take long to pull all of the ingredients together and the cooking goes really fast. The results are well worth the little effort it takes to gather all of the ingredients.

An easy and safe way to peel the ginger root before shredding it is to use the edge of a spoon to scrape the skin off.

This delicious recipe originated in the Cooking Light Weeknight One-Dish Meals cookbook. We have changed the recipe somewhat based on our preferences as shown in the recipe below.

Spicy Asian Noodles with Chicken ingredients

 

Makes 4 to 6 servings

Ingredients

 

2

cups chicken breast meat cut into bite sized pieces

3

tablespoons cornstarch

2

teaspoons canola oil

2

teaspoons dark sesame oil, divided

1

tablespoon peeled and grated fresh ginger

2

garlic cloves, minced

½

cup chopped green onion, white and most of green parts

¼

cup chopped fresh cilantro

3

tablespoons lower-sodium soy sauce

2

tablespoons rice vinegar

2

tablespoons hoisin sauce

2

tablespoons Asian chile paste, more if you prefer the dish to be spicier

1

6.75 ounce package thin rice sticks (rice-flour noodles)

2

tablespoons chopped dry-roasted peanuts

 

Instructions

Note: When making Asian stir fry, I find it helpful to get all of the ingredients chopped and measured before starting to cook. The cooking process goes so quickly that to measure as you go runs the risk of over-cooking the meal. As always, do not re-use utensils or plates that have touched raw chicken until they have been well washed in hot soapy water and rinsed clean. That includes hands!

 

1.    Place the chicken pieces in a medium bowl. Sprinkle the cornstarch over the chicken and stir thoroughly to coat all of the chicken with the cornstarch. Let sit for a couple of minutes so the coating sticks well to the chicken.

2.    Heat the 2 teaspoons of the canola oil in a wok or medium skillet over medium-high heat. Add half of the chicken to the pan and cook until the meat is whitish and firm in texture and cooked through, about 3 minutes, stirring to cook all sides. Remove from the pan and put on a plate and repeat with the second half of the chicken. Once cooked, remove all of the chicken from the pan and place onto the plate. Wipe the pan out.

 

3.    Cook the noodles according to the package directions, then rinse with cold water and drain.

 

4.    Heat the 2 teaspoons of sesame oil in the pan and add the ginger and garlic to the oil. Cook for about 45 seconds, stirring constantly. Add the chicken to the pan then immediately add the green onions, cilantro, soy sauce, rice vinegar, hoisin sauce and chile paste to the pan, stirring everything together well until chicken is coated with the sauce. Add the cooked noodles to the pan and stir into the chicken and sauce mixture until well heated. Remove to a large bowl or individual serving bowls and sprinkle with chopped roasted peanuts right before serving.
