Vanilla Fruit Salad

Really cool and delicious, the sweet combination of flavors make Vanilla Fruit Salad a favorite.

Vanilla Fruit Salad combines juicy fruit cocktail and crushed pineapple with miniature marshmallows and vanilla pudding to form a sweet cool salad. Our Vanilla Fruit Salad is so quick and easy to make that we make it even on weeknights for the next evening’s supper. All of the ingredients are things that we normally have in the pantry, so we don’t have to make a special trip to the grocery store to make this salad. We sometimes take this to potluck dinners because everyone loves it and it is really easy to double or triple the recipe to make plenty. It is also affordable and kids love it.  

Make this at least 3 hours ahead of when you plan to serve it. It takes some time for the pudding to thicken and become creamy. Better is to make it the night before. It only gets better as it sits in the refrigerator and the flavors meld.  

We sometimes add freshly sliced bananas, additional maraschino cherries, halved white grapes, or even chopped apple to the salad right before serving it. These additions add a nice freshness to the salad. The salad keeps well for 2-3 days when well covered and stored in the refrigerator. If adding the fresh fruit into the salad, it should be eaten within one day.

Four ingredients and you have a great salad ready for supper.



Makes 6-8 servings




15 oz. can of fruit cocktail in syrup (we use the lite version)


20 oz. can of crushed pineapple with the juice


3.4 oz. package of miniature marshmallows


10.5 oz. package of dry instant vanilla pudding mix





1.     Combine the fruit cocktail with the syrup, the crushed pineapple with the juice and the miniature marshmallows in a medium sized bowl. Mix well.

2.     Sprinkle the dry vanilla pudding mix over the top of the fruit and marshmallow mixture. Mix in well.

3.     Cover the salad and place it in the refrigerator for at least 3 hours and preferably overnight.

4.     Mix it again right before serving. If adding fresh fruit, do so right before serving.
